When our social media coordinator came to us with the idea to make peanut butter cups from scratch for a Deskipes video, we were wary. There are already really, really good peanut butter cups available at every checkout line in America. Why reinvent the wheel?
“We don’t need to reinvent the wheel,” he said. “Just grease it.”
And so, tired from shooting down his many bad ideas, we agreed to let him try it. Turns out they’re really good. Sweet, salty, and with an added depth of flavor thanks to some vanilla extract. Another added bonus: you can fill them with whatever you want. (We made a few with Biscoff spread and they were lifechanging.)
2 cups Milk chocolate
1/2 cup smooth peanut butter
2 tsp. vegetable oil
2 tbsp confectioner’s sugar
1 tsp. vanilla extract
A pinch of salt
Two mixing bowls
Miniature paper cupcake cups
In one bowl, mix together peanut butter, 1 tsp. vegetable oil, confectioner’s sugar, vanilla extract, and salt.
Heat chocolate in microwave for 20 seconds. Stir. Repeat until chocolate is completely melted.
Pour a thin layer of melted chocolate into the bottom of each paper cup. Add a proportionate amount of peanut butter filling to the center of each cup, leaving a thin perimeter of chocolate around the outside. Top with more chocolate. Place in refrigerator to chill until chocolate sets.
