Blood Orange Sparkler

1/2 oz blood orange cordial (see below)
4 oz sparkling wine

* For a virgin twist, use sparkling water in place of sparkling wine.

1/2 cup juice of blood oranges (approximately 5-6 medium sized oranges)
1 teaspoon of zest from the blood oranges
1/2 cup of sugar

microplane grater
small saucepan
mesh strainer
margarita glasses
cocktail sugar (optional)

Begin by washing the blood oranges and zesting the rind. Cut the blood oranges in half and juice them thoroughly.

Add the juice of the blood oranges to a small sauce pan. Stir in the sugar and cook on a low/medium heat setting until the sugar is completely combined. Be sure to remove the pan from the heat as soon as the sugar is dissolved. Stir in the zest and allow to cool.

Once the liquid has come to room temperature, strain through the mesh strainer to separate any pulp and zest.

Pour 1/2 oz of the cordial into the bottom of a margarita glass. Top of with 4 oz of sparkling wine or water and garnish with a citrus peel. For an extra treat, coat the rim of the margarita glass in cocktail sugar.
