When To Replace Your Combi Oven

Combi ovens are extremely helpful in a commercial kitchen. They use different technologies combined to cook your food. Oh, wait! Combi oven. Combinations of technologies. I think I’m on to something here. Combi ovens can be used as convection ovens, steamers, sous vide cookers, and more. Although combi ovens are versatile and are pretty advanced in the world of commercial cooking equipment, they still need a certain level of care and maintenance.

The expected life of a combi oven ranges from 7 to 10 years, and that’s based on proper maintenance and operation techniques. Here are a few signs that it may be time to replace that precious cooking commodity:

1.) Declining Cooking Ability

An old combi oven will work harder to reach that proper cooking temperature. This makes it costly to operate, and a replacement unit may be necessary. But as time goes on, combi oven technology continuously grows, including greater efficiency, integration of new cooking abilities, and advanced control options.

2.) Visible Signs of Deterioration

This may seem like common sense, but don’t ignore the warning signs! Don’t mean to sound like your doctor, but it’s true. When an older combi unit starts aging, you will typically see dents and rust. At this point, it may be time for a replacement. In addition, using unfiltered water can cause a buildup of lime, greatly shortening the oven’s service life.

3.) S-A-F-E-T-Y

Safety is of paramount importance in any restaurant kitchen. If your equipment doesn’t seem like it can operate safely, the combi oven should be immediately retired.

4.) Cost of Maintenance

Let’s face it; Service costs can be a bummer. But servicing your equipment to industry standards is something that should never be looked over. When the cost of maintenance begins to rapidly escalate, oven operators should weigh the cost of continuing to run their equipment vs. purchasing a newer, energy-efficient model. Parts can also become obsolete, which will warrant replacement.

Commercial combi ovens can be a wonderful thing. Simply maintain your equipment, and it will service you for years to come!
