When you think of Summer, soup probably isn’t your first go-to meal. But with this recipe for Lithuanian Cold Beet Soup, you may be soon changing your mind!
What you’ll need:
- 1 lb. beets, peeled and shredded
- 4 eggs
- 1 qt. buttermilk
- 1 large English cucumber – peeled and sliced
- 1 bunch fresh dill, minced
- 1/4 cup minced chives
Place eggs into a saucepan and cover with 1 inch of water. Cover saucepan and bring water to a boil. Remove from heat and let eggs sit for 15 minutes. Drain and then cool eggs under cold water. Peel eggs and chop.
Pour buttermilk into a large bowl; add beets, eggs, cucumber, dill, and chives. Stir gently. Chill in refrigerator for 1 full day before serving.
